Processing

Pulped Natural

A Brazilian processing style where the cherry is pulped but no fermentation tank step is used — the seed is dried with mucilage still on, similar to honey process.

Pulped natural is the Brazilian precursor to the Costa Rican honey process. Cherries are pulped to remove the skin, but the seeds skip the wet-fermentation step and go straight to the patio with most or all of the mucilage still attached. The result lands between washed and natural — cleaner than a full natural, with more body and sweetness than a fully washed coffee. It is the dominant processing style in much of Brazil.
