Processing

Honey Process

A hybrid processing method where the cherry skin is removed but some sticky mucilage stays on the seed during drying — between washed and natural in profile.

Honey process is named for the sticky mucilage that coats the parchment as it dries (the "honey" is not a flavor — there is no honey involved). Variants are graded by how much mucilage is left on: white, yellow, red, and black honey, with darker grades leaving more pulp on and producing a fruitier cup closer to a natural. The technique was popularized by Costa Rica in the early 2000s and is now common across Central America.
