Lungo · LOON-goh

A "long" espresso shot pulled with more water than a standard espresso — typically 50–60 g of liquid, more bitter and less sweet than a regular shot.

Lungo is Italian for "long" and is the opposite of a ristretto. The longer extraction pulls more water through the same dose of coffee, dragging out compounds that a normal shot would leave behind, which adds bitterness and astringency. It is closer to an Americano in volume but darker and more concentrated because no water is added after the pull.
