Doppio is Italian for "double," and it is what most American specialty shops serve by default when you order an espresso — single shots are now the exception. The double basket is also more forgiving to dial in than a single, which is why baristas pull doubles even when serving them as the base of a smaller drink. Order it neat in a demitasse to taste a roaster's espresso bean at full strength.
