Dose is one of the three numbers a barista dials in: dose (in), yield (out), and time. A modern double-shot espresso is usually pulled with an 18 to 20 g dose, though basket size and house preference vary. Increasing the dose without adjusting the basket size leaves less headroom in the puck and tends to slow the shot; decreasing the dose speeds it up.
