Cold brew differs from iced coffee — iced coffee is hot-brewed and chilled, while cold brew never sees heat. The long, cold steep extracts caffeine and sugars but leaves behind much of the acidity and bitterness, producing a drink that tastes mellower and naturally sweeter. Almost every Brooklyn shop runs cold brew on tap from spring through October, and many serve a nitro version (charged with nitrogen for a creamy head) as well.
