Oat milk overtook almond milk as the leading non-dairy milk in specialty coffee around 2018, driven partly by Oatly's barista-edition formula, which steams and stretches in a way that more closely resembles whole cow's milk than nut-based alternatives. Most Brooklyn specialty bars now stock at least one barista-grade oat milk as standard, and many have dropped soy entirely. The fat content and emulsification agents in barista editions are calibrated to hold microfoam without breaking, which is why your oat latte looks like a proper latte.
