The flat white is a smaller, espresso-forward sibling of the latte that emerged from the Australian and New Zealand coffee scenes in the 1980s. Compared with a latte, it uses less milk and almost no visible foam — just glossy, integrated microfoam — so the espresso flavor stays in the foreground. It became a signature drink of third-wave cafés in the 2010s and is now a default order at most Brooklyn specialty bars.
