Brewing methods

Chemex

A pour-over brewer with an hourglass-shaped glass carafe and a thicker, bonded paper filter that produces an exceptionally clean, bright cup.

The Chemex was designed in 1941 by chemist Peter Schlumbohm and is now in the permanent collection of the Museum of Modern Art. Its proprietary paper filter is roughly 30 percent thicker than a standard cone filter, which strips out more oils and fines and produces a tea-like clarity in the cup. Brooklyn shops often offer it as a multi-cup option (typically 6–8 oz finished servings) for a table that wants to share a single coffee.
