Sey Coffee
The craft pole. Nordic-influenced light roasts on a Probat L12 at the back of the room, washed single-origins, walnut flight board with sparkling water, gratuity-free bar. Food & Wine called it the best coffee shop in America in 2019; Henrique keeps coming back for the pour-over room, not the laptop scene.
Variety Coffee Roasters, Bushwick
The other pole. In-house roast since 2014 (now also Stagg St), La Marzocco on the bar, communal tables, outlets, espresso until 9 p.m. Henrique’s contrast still holds: Sey is where you sit with a pour-over; Variety is where you need a solid coffee, a table, and an outlet, and still get a real roast program behind it. It is here because it is a Henrique pick with a production roast point of view, not because of a star sort.

- Obscure Coffee Roasters : Puerto Rican-focused nano-roastery (Norberto Pena); Latin American lots only; Loring time rented from Loveless; drinks that lean into that kitchen (coquito latte, tamarindo spritz), inside Bushwick Comedy Club.
- Loveless Coffees : the room Obscure borrows roast capacity from; specialty bar with a delicate espresso program (Rosegold shows up in the editorial notes).
Serious bars, wider menus
- Headrest Coffee : immigrant-owned since 2020; third-wave espresso plus drafted cold brew; seasonal fancy menu; plant-heavy room. A craft coffee stop when you want craft in the cup without the pilgrimage framing.
- Dayglow : coffee + brewery, open late (about 11 p.m.); light-roast-leaning espresso and a brown butter Vienna that the room is known for. Use it when specialty and still open have to be the same door.
- Kitaro : small specialty room (coffee, pastries, onigiri). Currently leads the auto-sorted specialty list on this URL; treat it as a careful neighborhood bar, not as #1 Bushwick. We do not run a fake top ten here.
