Brewing methods

Drip coffee

Brewed coffee made in a batch machine that drips hot water through a flat-bottom paper filter into a carafe — the standard "house brew" at most cafés.

Drip coffee — sometimes called batch brew — is what most cafés serve as their by-the-cup default, brewed in 1–4 quart batches on a Fetco or Curtis machine and held on a heating element or in a thermal carafe. The quality bar is set by the coffee, the ratio, and how recently the batch was pulled; a fresh pot at a Brooklyn specialty roaster can rival a manual pour-over for a fraction of the wait.
