Canyon Coffee is the LA-based specialty roaster's first NYC outpost, opened in 2026 on Vanderbilt Avenue with a serious sustainability angle: Regenerative Organic Certified sourcing, transparent farm relationships, and a lighter Scandinavian-leaning roast profile that has built Canyon a cult following in Los Angeles. The Brooklyn location brings that same program east. The coffee is technically excellent — single-origin lots that highlight the producers, espresso pulled with attention to ratios, and the kind of nuanced Scandinavian-style roasts that reward people who want to actually taste the coffee. The space is small and design-conscious, leaning counter-service. A high-bar specialty bar that joins Caffè de Martini in the dense Vanderbilt Avenue cluster.
