About Butler, DUMBO

Butler is a fine-dining-caliber bakeshop and espresso bar founded by Ryan Butler (a Culinary Institute of America graduate who served as executive pastry chef at the Michelin-starred Piora) alongside partners Rod Coligado and Hugo Murray. The DUMBO outpost at 40 Water Street brings Butler's signature combination of Michelin-level technique and accessible all-day fare to a corner of the neighborhood that previously lacked a serious pastry destination. Intelligentsia Coffee anchors the drink program and is paired with house-laminated puff pastry, sausage rolls, sticky buns elevated with miso and toffee, and the now-famous breakfast empanadas, handmade through a six-step process and finished with a dusting of dukkah. The interior is small and intentional: clean tile, soft lighting, and a counter that lets you watch pastries being plated. Ryan Butler has cooked at the James Beard House on multiple occasions and Butler has been featured in the Michelin Guide, The Infatuation, Highsnobiety, and Eater. The full pastry program is baked daily at the SoHo headquarters and delivered to all locations.
