Knock Box

A small bin with a padded bar across the top — the barista knocks a spent espresso puck out of the portafilter against the bar, into the bin.

  • Also called: dump box

After every shot, the barista loosens the portafilter, walks to the knock box, and bangs the rim of the basket against the rubber-coated bar to dislodge the spent puck. The bin underneath collects the wet pucks for composting (or the trash). On a busy Brooklyn morning, a single bar can fill a knock box every 30–45 minutes, which is why most have at least two and a closing-shift pour-out routine.
