Café bombón originated in Valencia and is built in a clear shot or cortado glass: sweetened condensed milk goes in first, then an espresso shot is poured slowly on top so the two stay separated until you stir. It is intensely sweet by design (closer to dessert than a traditional milk drink) and is the Spanish-Mediterranean cousin of Vietnamese iced coffee's hot milk-and-espresso pairing.
